Garlic Bread

A Solid Three Stepper

Perfect way to get rid of stale bread if you have it. Older hamburger buns work great.  You're toasting it anyways so you don't absolutely need fresh bread...


Ingredients

Bread

Olive Oil (or melted butter)

Garlic powder


Method

Coat bread (soft part) with olive oil or melted butter

Lightly sprinkle garlic powder on bread

Bake for 8-12 minutes at 350 F

Serve


Variations

Use butter instead oil or some mixture

Add some parmesan to oil/butter or sprinkle grated cheese on bread during baking

Rosemary Baked Potatoes

Narrative

One of my favorite ways to make potatoes when I am not in a rush and would like to do other things. Baking time will vary based on how finely your potatoes are chopped.  Should come out as a nice golden brown.


Ingredients

Potatoes

Olive Oil

Salt and pepper

Rosemary (fresh or dry)


Method

Peel potatoes

Coarsely chop potatoes

Put in Oven dish

Drizzle potatoes with olive oil and mix up

Season with Rosemary, Salt, and pepper and mix up

Bake for 20 mins at 350 and stir dish preventing potatoes from sticking

Bake another 20 minutes ish and serve.

Fries

Narrative

Some people with unlimited space in their kitchens fry them twice. I dont think this is necessary t just ins't worth it and you need some comfort food.  You can control the salt, and even the oil you fry in.  But sometimes you just need a cheeseburger and fries.... and not those soggy things that come in the frozen food aisle... When putting your fries in the oil , be careful not to put too many as this will lower the frying oil temperature too much resulting in soggy trash. 


Ingredients

Potatoes (preferably big potatoes)

Cooking Oil

Salt


Method

Peel your potatoes (optional)

Chop into fry desired fry shape

Fill a cast iron skillet  with maybe a half inch to an inch of oil

Mean while get your cooking oil hot (350-400F ish, I use vegetable or peanut oil ) Smoke is bad

Fry for 5-10 minutes or until light golden brown and floating on the oil for a min

Pat dry or place fries on paper tower to absorb excess oil (try not to stack fries)

Sprinkle with salt

Serve

Oil the bread

Lightly coat with Garlic powder

Toast


Cut your garlic bread into little cubes

Oil Again

Bake again

Lazy Breakfast Potatoes

  1. Chop your potatoes into little cubes (I don't mess around with peeling these because I'm lazy and doesn't really make a difference)
  2. Coat a skillet with oil
  3. Lightly coat with seasoning salt (or salt pepper & garlic powder)
  4. Bake for 20 minutes at 400 F
  5. Fry over low to medium heat
  6. Stir occasionally, add oil as necessary.
  7. Serve when crisp


Mashed

  1. Peel  potatoes and quarter them
  2. Bring a pot of salted water to boil
  3. Boil potatoes Until tender (about 15 minutes)
  4. Drain Potatoes
  5. In pot that you cooked the potatoes put the drained potatoes back in and cook on medium heat and stir around for 2-3 minutes
  6. Mash
  7. Mash in butter (at least a half stick)
  8. Add milk or cream a little sauce pan (with optional garlic and herbs)
  9. Add the cream little by little in the potatoes using a sieve
  10. mix uniformly add some stuff on top if you want (pepper chives gravy or whatever) 

 Serve
